Procédé de traitement, de préférence en continu, de carcasses, en particulier de carcasses de volailles (3), en vue d'un traitement cutané desdites carcasses pour réduire leur flore bactérienne, en particulier au moyen d'une installation conforme à l'une des revendications 1 à 10, caractérisé en ce qu'il comprend au moins une étape d'exposition des carcasses (3) à au moins un flux d'un fluide gazeux chaud pendant un temps suffisant pour obtenir un échauffement rapide et superficiel desdites carcasses (3). 11. Method of treatment, preferably continuously, of carcasses, in particular poultry carcasses (3), with a view to skin treatment of said carcasses to reduce their bacterial flora, in particular by means of an installation in accordance with 'One of claims 1 to 10, characterized in that it comprises at least one step of exposing the carcasses (3) to at least one flow of a hot gaseous fluid for a time sufficient to obtain rapid and superficial heating of said carcasses (3).

Procédé de traitement selon la revendication 11, caractérisé en ce qu'il comprend, en amont de l'étape d'exposition desdites carcasses (3) à un flux de fluide gazeux chaud, au moins une étape de plumaison et une étape d' evisceration et, en aval de ladite étape d'exposition des carcasses à un flux de fluide gazeux, au moins une étape de refroidissement par trempage ou ressuage desdites carcasses et éventuellement une étape d'emballage desdites carcasses de volailles (3) entières ou découpées. 12. Treatment method according to claim 11, characterized in that it comprises, upstream of the step of exposing said carcasses (3) to a flow of hot gaseous fluid, at least one plucking step and a step d evisceration and, downstream of said step of exposing the carcasses to a flow of gaseous fluid, at least one step of cooling by soaking or bleeding of said carcasses and optionally a step of packaging said whole or cut poultry carcasses (3) .
