Exceptional (and labor-intensive) dessert wine from La Biancara made with Garganega grapes from southern-facing vines growing in volcanic and clay soil. Grapes are harvested in fall and hung on large screens outside, where they’re exposed to the winds until December.

The end-of-year fermentation happens in open vats for around three weeks, with Angiolino taking occasional trips indoors with small amounts of must to kick-start the native yeast activation before returning it to the vat. After pressing, the wine ages for eight to nine months in 1500L barrels.

A few more months of aging in tanks takes place before bottling, which happens three years after the initial harvest. Notes of hazelnuts, citrus, plums, and ginger. Excellent companion for cheeses and, well, dessert. Bottled unfined and unfiltered with no sulfur added.
